Migas with Fresh Tortillas

Jen made this as she was running out the door for a surprise Baby Shower this, well, afternoon when I got up.  Sleep is good!  There are a LOT of variations in this recipe, and Jen didn’t use any of them, but here’s one to get you started.  Eggs, fresh crispy tortilla strips, and a little salsa verde with tomatillos and queso fresco on top.
